Ingredient list:
- 1 ½ cups Farofa de Mandioca Tradicional or Farofa Milho
- 2 Plantains
- 2 tablespoons butter
- 1 tablespoon olive oil
- ½ sliced onion
- 10 sliced grape tomatoes
- Parsley + Chives to taste
- Salt to taste
- Chop plantains into small ½ inch pieces.
- Add olive oil and butter to pan, let it warm up on medium heat then add onions and plantains for 5 minutes.
- Add tomatoes for 2 minutes. Turn to low heat.
- Slowly add Farofa, seasonings, and salt while mixing then cook on low for 2-4 minuets.
- Turn off heat. Your plantain farofa is ready!
