Ingredient List (6 portions ✅)
• Yellow Cassava Flour (Farinha de Mandioca Amarela) ~ 1.5 cup
• Pinto or Black Eye Peas Beans ~ 1 cup or 150 grams
• Water ~ 1.5 cup
• Collard Greens ~ 4 leaves
• Pork Salami ~ 0.5 cup or 40 grams
• Bacon ~ 3 pieces
• 3 Large Local Eggs
• 1/4 onion
• 3 Bay Leaves
• Parsley, Salt and Pepper to taste
How-to:
1- Soak beans in water for 6 hours or overnight.
2- Pressure cook beans on high for 30 minutes with salt, pepper, and bay leaves.
3- Thinly chop collard greens, onions, bacon and salami.
4- Add olive oil butter, onions, and collard greens to pan and fry for about 10 minutes.
4- While greens are getting moist, fry bacon and salami in a separate pan. Then, scramble eggs in same pan after pork is cooked.
5- Add greens and farinha to bacon pan. After mixing, add cooked beans with about 1/4 cup of bean broth leftover.
6- Top with parsley and more seasonings.
