Ingredient List (4 portions ✅)
• 2 chicken breast pieces ~ 2.5 lbs
• Half lemon
• 1 small whole kernel corn can ~ 240 grams
• 0.5 cup half and half or light cream ~ 240 grams
• 1/4 cup Requeijão (cheese dip/spread)~ 240 grams
• 0.5 cup water
• 2/3 slices of provolone or cheddar cheese ~ 100 grams
• 1 cup Shoestring fries
• Salt and seasonings to taste (we used italian, salt & pepper, garlic)
How-to:
1- Squeeze lemon juice and add seasonings to chicken pieces placed on Instant Pot.
2- Pressure cook chicken on high pressure for 20 minutes.
3- Blend corn, requeijão, half & half and water with salt.
4- Shred chicken when done and mix with blended ingredients from previous step.
5- Add seasonings and transfer to serving dish.
6- Top with cheese and shoestring fries.
7- Bake on 350 degrees for 20 minutes.
